5 Of The Best Fusion Restaurants In Singapore

The Growing Food Scene That Celebrates Diversity
The beauty in fusion cuisine lies in its ability to blend different culinary traditions to create original dishes with a strong individual stamp. While purists may deem it to be an adulteration, fusion food has found a way into the hearts of this multicultural, cosmopolitan society. In fact, fusion food is hardly a new a concept to Singaporeans. Peranakan cuisine is a prime example of fusion food – with origins in the Chinese-Malay heritage, the distinct dishes we savour today were born from the amalgamation of ingredients from classic Chinese dishes such as pork and garlic, with spices commonly used in Malay dishes such as lemongrass, and belacan.
With that in mind, here are our top five favourite contemporary fusion restaurants that are pushing the envelope of this growing food scene that celebrates diversity.
Morsels
Founded and run by Chef-Owner Petrina Loh, Morsels has recently relocated to the popular food enclave of Dempsey Hill. Set within a charming farmhouse-chic abode, the inconspicuously located restaurant continues to serve their signature fusion creations. While the rustic interior filled with potted plants and weather-beaten wood furniture conjures up an easy-going casual vibe, the food is anything but. Chef Petrina’s meticulous attention to detail and quality is reflected in the emphasis she places on presentation and fresh ingredients made from scratch such as curing her own duck prosciutto. Firm crowd favourites include the Charred House-Poached Octopus – an extremely tender octopus atop a bed of squid ink pearl rice risotto with salted egg sauce drizzle.

The Palmary
An excellent spot for brunch that’s easy on the pocket is The Palmary. Located in a beautifully restored, three-storey, pre-war transitional shop house at 142 Owen Road, the restaurant that serves up Asian-European cuisine has garnered quite a following. With its cosy interior, featuring crisp white marble tables set against a backdrop of flowing greenery, the space beckons you in with its alluring juxtaposed beauty that makes for an Instagram-worthy shot if anything else. With all of its produce sourced fresh from Tekka market, you can be sure that there is no compromise on quality. A definite must-try, according to raving reviews by local host celebrity Rozz Lee is the Foie Gras with balsamic reduction, which comes with crispy crackers and chestnut honey.

Whitegrass
Whitegrass is a fine dining restaurant offering Australian cuisine with a touch of Asian. Chef Sam Aisbett’s training under culinary luminaries like Peter Gilmore and Tetsuya Wakuda is clearly reflected in the adventurous menu. Signature dishes showcase the fusion of the two cultures, such as the slow-braised Mangalica pork enhanced with fiddlehead ferns and served in a tasty seaweed and pork broth, tiger abalone, fermented cabbage and white turnip. Other signature dishes that bring diners back for more are the desserts that highlight local produce such as the Jackfruit ice cream with coconut mousse, fresh longan and shard of almond ginger cake.

Lerouy
Perfect for a more intimate affair is Restaurant Lerouy – the brainchild of Chef Christophe Lerouy that previously helmed the one-Michelin-starred Alma By Juan Amador. Tucked away on Stanley Street, the French culinary master skilfully melds modern French cuisine with Asian ingredients and the occasional spice. The intimately cosy, industrial-chic restaurant only seats 26 – all at the counter that meanders around the small open kitchen, in full view of chef Christophe and his brigade de cuisine cooking and plating the dishes. With an ever-changing menu featuring unique ingredients such as the torched toothfish in an umami langoustine bisque, one can only expect the unexpected when dining here.
Dinners feature only two omakase choices: Petit ($38 for a three-course lunch, $98 for a five-course dinner) and Grand ($55 for a five-course lunch, $128 for a seven-course dinner).

Wild Rocket
The list wouldn’t be complete without Wild Rocket – trailblazers of the “Mod Sin” movement. Known as ‘Modern Singaporean’ cuisine, this growing cooking style takes on a modern and innovative approach toward local dishes. Drawing inspirations from our local hawker fare, Chef-Owner Willin Low elevates iconic local dishes in his high-end restaurant that has garnered a major cult following. The result are unique concoctions such as Krapao Thai Basil Minced Pork Bee Tai Mak with Onsen Egg and Baked Halibut with Buah Keluak Pesto & Roasted Vegetables. We recommend reserving ahead before visiting this highly esteemed restaurant on Rochor’s Upper Wilkie Road.
