This summer, the iconic Marina Bay Sands will become home to Milos, marking the restaurant's first foray into Asia. Founded by the visionary chef Costas Spiliadis, Milos is set to bring its celebrated Greek cuisine and renowned hospitality to the vibrant dining scene of Singapore. Since its inception in Montreal in 1979, Milos has built a 45-year legacy of culinary excellence. With successful locations in major cities such as New York, Athens, Miami, Las Vegas, London, Los Cabos, and Dubai, Milos continues to captivate food lovers worldwide. Now, Singaporeans will have the opportunity to experience Milos’ unique blend of authenticity, simplicity, and high-quality ingredients.

Milos is renowned for its exceptional seafood, meticulously sourced from the Mediterranean. A highlight of the dining experience is the open seafood market display, where diners can personally select their fresh catch, guided by attentive servers. This bespoke service underscores Milos' dedication to offering an unparalleled seafood experience. The menu at Milos Singapore will feature signature dishes that showcase the restaurant’s commitment to quality and tradition. Guests can indulge in the Milos Special, a delightful tower of crispy zucchini and eggplant paired with Kefalograviera cheese and creamy tzatziki. Other menu highlights include whole fish baked in sea salt and lobster Athenian pasta, ensuring a memorable culinary experience.

Leading the culinary team at Milos Singapore will be Executive Chef Fotis Kokoshi, whose extensive experience in Mediterranean cuisine includes a tenure at the 1-Michelin-starred CTC Urban Gastronomy in Athens. The menu is designed for sharing, encouraging guests to enjoy nourishing food in a relaxing ambiance that evokes the Greek islands.

The restaurant's interior, designed by Alain Carle Architecte, reflects the elegance of Greek architecture with elements such as Greek marble and wood, set against a backdrop of serene neutral colours. This design aims to transport diners to the tranquil island homes of Greece. Moreover, Milos Singapore will feature a unique wine programme offering the finest Greek wines. With an extensive list of 350 to 400 wine labels, including indigenous grape varieties like Assyrtiko, Xinomavro, and Agiorgitiko, guests can savour some of the best wines Greece has to offer.
