WHERE TO EAT: Foo’d By Davide Oldani

Davide Olandi, chef-founder of one-Michelin-star D’O restaurant in Italy, has opened Foo’d by Davide Oldani at Singapore’s beautifully restored Victoria Theatre and Concert Hall.

Milan’s Michelin-starred chef Davide Oldani of D’O acclaim expands his epicurean empire by opening Foo’d at Singapore’s beautifully restored Victoria Theatre and Concert Hall.

The 128-seater restaurant rests in the circa-1862 national monument with a façade covered in pristine neo-classical lines. Inside, the setting is equally resplendent — tall Corinthian columns stretching to the high ceiling, creating a roomy and radiant dining area awash with white walls, polished marble floors and dark wooden furnishings.

With a menu conceptualised by the Italian celebrity chef himself, foodie fanfare includes Oldani’s signature caramelised onion. Steamed, then baked onion halves are topped with a spoonful of 20-month aged Grana Padano cheese ice-cream. The result? A winning dish that captures varying textures and flavours; where cold and sizzling crisp, sweet and savoury hints, become partners on a plate.

Our five-course degustation continued with a wholesome pea and lemongrass soup with poached egg and almonds. Coming into our mains, which was a bowl of risotto with Bronte pistachios and crayfish, the unusual hybrid spoon-fork made an appearance. Oldani is well-known for serving his renowned risottos with his designer sporks, a deliberate affirmation of making haute cuisine accessible to all.

Oldani’s innovative take on desserts depict the same pattern of playfulness, in terms of presentation and concoction. The lemon curd is given a spiky meringue shell, which tastes like a crust-less, porcupine-version of the classic lemon meringue pie. It is paired with a dollop of lettuce ice-cream set atop gravelly dark cocoa crumble.

Undoubtedly, Oldani’s creative culinary approach, which follows his distinctive ‘Cucina Pop’ style of creating high-quality yet reasonably priced dishes, sets the restaurant apart.

Priced at S$138++ for a five-course set dinner and S$168++ for a seven-course set dinner. A new à la carte menu has also been recently introduced.
